So I'm in LOVE with French Toast. When Steve and I would go out to breakfast I would almost always order it. I refused to learn how to make it because everyone said it was so easy, because if it was easy and since I loved it so much, I would be eating it every day. That probably would not be a good thing for my waistline. French Toast is delicious.
Now with our two girls and just our life in general, we rarely go out to breakfast, so I have never before realized that I can no longer order French Toast at resturants. I don't know why it took me over a year of being on my crazy everything free diet to figure this out, but just last week I realized if I ever want to have French Toast again, I was going to have to make it myself.
So that I did.
For easter breakfast no less! So thats why these are called Easter French Toast. Its for sure going to be a tradition, and it was SUPER easy. Seriously will be making this all the time now. Could be dangerous.
You will need:
Udi's Gluten Free bread {this is the beast GF I have found, seriously can't tell that its gluten free!}
1 cup Almond Milk, {I used unsweetened vanilla because that what we have on hand}
4 eggs
A bunch of butter, or other oil to use in the pan {Maybe next time I will try coconut oil! yum!}
1/2 tsp vanilla
1/4 tsp cinnamon
Mix up the milk, eggs, vanilla and cinnamon, and soak the bread in the mixture. {Recipe I tweaked said to soak for about 30 seconds on each side, but I left it in there while I got the stove ready}
Melt some butter in the pan, then place bread in the pan, about 3 minutes each side until brown.
Serve with sliced bananas and maple syrup. YUM
